Tuna and Vegetable Balls
Recipes > Smaller MealsThese are super versatile. Take as a share plate or have several balls with a side salad for a meal. Great for an entree as well.
Ingredients
- 1 cup cooked rice
- ¼ cup low fat grated cheese
- 185g can tuna, drained and flaked
- ½ cup carrot, grated
- ½ cup allowed vegetables finely chopped [or ½ cup zucchini grated]
- 1 egg, lightly beaten
- Gluten free bread crumbs or rice crumbs for the topping
Method
- Combine all ingredients and roll into walnut sized balls. Roll in crumbs to coat
- Heat some oil in a pan and gently sauté until golden brown on all sides
- Drain on absorbent paper and serve warm or cold
Makes 12 balls
