Ham and Noodle Omelette

Ingredients
- 65g gluten free dried noodles
- 1 large tomato diced
- 60g ham, finely chopped
- 1 small zucchini, grated
- 3 eggs
- 2 teaspoons oil
Method
- Place noodles in bowl and cover with boiling water for 4 to 5 minutes, drain and return to bowl and add tomato, ham and zucchini.
- Whisk eggs with 1 tablespoon cold water.
- Add 1 teaspoon of oil to a pan and cook half the noodle mixture for 1 to 2 minutes until heated through. Add half over the egg mixture and cook for 2 to 3 minutes or until egg mixture almost set and place under grill for several minutes until golden and egg mixture has set.
- Repeat with remaining noodle and egg mixture for the second serve.
Serves 2
