Chicken Noodle Soup

Ingredients
- 3 medium potatoes, cut into thick cubes
- 3 carrots, sliced thickly
- Cup of green beans
- 500g chicken, cooked and cut into large chunks
- 8 cups prepared chicken stock – use Massel 7’s Chicken stock cubes
- 250g gluten free noodles.
- Salt and pepper to taste
Method
- Cook the noodles as per packet directions, run under cold water to stop the cooking process and set aside.
- Cook the potato and carrots for 10 minutes in a teaspoon of oil. Add the prepared chicken stock and simmer until the vegetables are cooked. Add the green beans and simmer until cooked. Add the chicken and simmer for a further 2 to 3 minutes. Season and add the noodles. Serve immediately.
