Creamy Rice

Ingredients
- ½ cup uncooked rice
- ¾ cup water
- 1 ¼ cups lactose free skim milk
- 2 tablespoons walnuts
- ¼ teaspoon vanilla essence
- 1 tablespoon sugar
Method
- Wash rice and place in saucepan. Cover with water and simmer over low heat until water is absorbed
- Add ¾ cup milk and simmer again until absorbed stirring whilst cooking
- Add the remaining milk and cook again until milk absorbed
- Stir in walnuts, nutmeg, vanilla and sugar
- Serve warm with sliced fresh strawberries
